Blueberry Spinach Salad with Lemon Vinaigrette

A fresh and healthy spring salad tossed with a simple tangy lemon dressing!

Hello, dear friends!

Today I write this post with a very heavy heart.

It’s been a struggle this week to feel motivated or excited about anything with everything going on in the world. The news seems more and more devasting each and every day. And it feels so frivolous to be posting about home decor, DIY, or sharing a recipe when there is so much suffering.

But I started this blog to help others and to inspire. My hope is that when you come here you can ‘escape’  and find a bit of peace from all that is around you for even just a brief moment.

With that said, today I’m sharing a healthy, and super comforting recipe.

Because often during these times of worry and heartache, we forget to take care of ourselves.

Stress and worry can certainly take a toll on our minds, but they can also do great damage to our bodies as well.

Today’s recipe will give you a much-needed boost of energy and keep you strong and ready to take on anything.

Like my Winter Salad, this Blueberry Spinach Salad can be made any time of year. But I especially enjoy it in the early months of spring because that’s when asparagus is SUPER fresh and delicious in our area! Of course, you could exclude the asparagus but I think it gives the salad that extra crunch factor I LOVE, without adding those high-carb croutons.

The other reason I love it so much is because I skip the usual heavy dressings, and go for my simple but OH SO yummy lemon vinaigrette!

It’s light, fresh, and a wee bit tangy. And really brightens up this simple salad SO much!

what you need to make a blueberry spinach salad:
  • Baby Spinach
  • Blueberries (fresh or frozen)
  • Red Onion
  • Asparagus (blanched)
  • Feta Cheese
  • Almonds
what you need for the lemon vinaigrette:
  • Lemon juice (fresh)
  • Garlic
  • Dijon Mustard
  • Extra Virgin Olive Oil
  • Salt & Pepper

The salad is perfect on those busy weekdays for lunch. Or serve it up as a healthy side with your favorite chicken, fish, or beef dishes!

Blueberry Spinach Salad with Lemon Vinaigrette

A fresh and fruity salad with a homemade lemon dressing.

Ingredients

  • 4 cups fresh baby spinach
  • 1 cup blueberries fresh or frozen
  • 3 spears asparagus
  • 1/3 cup feta cheese
  • 1/4 cup sliced almonds
  • 1/4 cup thinly sliced red onion

For Lemon Vinaigrette

  • 2 1/2 Tablespoons fresh lemon juice
  • 1 clove garlic minced
  • 1 1/2 teaspoons Dijon Mustard
  • 1/2 teaspoon honey
  • 6 Tablespoons Extra-Virgin Olive Oil
  • salt and pepper to taste

Instructions

  1. Fill a medium bowl with ice-cold water. Set aside. Add 1 cup of water to a medium saucepan. Bring to a bring. Add spears of asparagus to the boiling water. Cover and boil for 2-3 minutes or until the asparagus turn bright green. Remove the spears immediately and place them in the ice-cold water to stop cooking. Remove from the cold water and cut the asparagus into bite-sized pieces.

  2. Add the salad ingredients, including the blanched asparagus into a large salad bowl.

  3. In a small bowl, whisk together the lemon juice, garlic, dijon mustard, and honey. Slowly add in the olive oil and whisk until the dressing is emulsified.

  4. Drizzle the salad with the dressing and toss. Serve immediately.
