A round-up of all our favorite desserts for all those lemon lovers out there!

Hello, sweet friends!

If you follow along then you are probably aware that I am a HUGE lemon lover!

I’ve said it before and I’ll say it again. I put lemons in almost EVERYTHING we eat and drink!

Like my water & tea, salad dressings, numerous chicken &pork recipes, salmon, roasted green beans, just to name six.

And when I’m not putting them in every food or drink I possibly can, I use them to clean with.

5 ways to use lemons to clean:
  • Fill a spray bottle with half water and half lemon juice and use it as an all-purpose cleaner.
  • Fill a small bowl with water and lemon juice (or rinds) and place it in the microwave. Bring it to a boil and let it sit for 5 minutes. Wipe clean.
  • Pour lemon juice down your drain or garbage disposal to de-grease and deodorize.
  • Freshen up cutting boards by spraying them with lemon juice and allowing them to soak for 5-10 minutes. Rinse and dry.
  • Remove stubborn stains from countertops and plastic dishes.

Every time I see or smell a lemon, I can’t help but smile. So I always have some displayed in bowls or on a cake stand.

I even use them as a natural bug repellent to keep the bugs away in the summer!

 

But my absolute FAVORITE way to use lemons is in yummy desserts!

I’m always amazed that I can immediately change an overly sweet or ho-hum dessert into absolute perfection just by adding a wee bit of lemon juice or zest!

Lemons definitely add a complexity of flavor and freshness to any recipe they are in. But especially so when it comes to desserts.

Spring is actually one of my favorite times to use lemon in my desserts because it’s the only time I can get my hands on Meyer Lemons. Which, if you’re a lemon fan like I am, you’ll know is THE lemon of all lemons!

Finding Meyer Lemons in Minnesota isn’t always an easy thing. But sometimes, right around the end of March or early April, our local grocery store will get some. And you better believe they have me on speed dial when they do!

Our family enjoys lemon desserts year-round, but we especially LOVE them around the Easter holiday. And today I’m going to share our TOP 10 favorites!

Starting with…

10. MINI LEMON BREAD LOAVES

I’m not going to lie, my friends. This bread is AH…MAZING! I mean, first of all, it’s literally BURSTING with lemon flavor. It is also melt-in-your-mouth SUPER moist. But the very best part is…right after you take these mini loaves out of the oven you drizzle them with a sweet-lemony glaze! Yes, PLEASE!

9. CARROT COOKIES WITH LEMON CREAM CHEESE FROSTING

These light and airy carrot cookies are perfect all by themselves. But then I add a lemon-infused cream cheese frosting and take them OVER THE TOP! (Think carrot cake without all the calories!)

8. LEMON CURD

Okay, so this buttery-creamy oh-so-lemony lemon curd isn’t exactly considered a dessert. It is a SUPER yummy spread for toast, biscuits, and scones for sure. And it makes the perfect topping for a bowl of strawberry ice cream. But it is also one of the most DELICIOUS additions to many of my desserts too so I just HAD to include it. (see #7!)

 

7. BLUEBERRY LEMON SWEET ROLLS

We take these light and fluffy blueberry sweet rolls to a whole other level when we filled their center with lemon curd and topped them with a creamy lemon frosting!

6. Strawberry Lemon Scones

Is there a better fruit combination than strawberries and lemon? Not in my recipe book. The flavors pair perfectly with one another, especially when they are in these tender and moist strawberry-lemon scones.

5. SIMPLE HOMEMADE LEMON BARS

These perfectly lemon Lemon Bars have a special place in my heart and it’s not just because they are filled with lemon and are SUPER simple to make! It’s more because it was the very first recipe my mom gave me when I became a mom!

4. MINI LEMON CHEESECAKES

Delicious, creamy, and tantalizingly tart! These mini lemon cheesecakes are all of these things and so much more!

3. LEMON POUND CAKE

This scrumptiously moist cake is SO easy to make and will be gone before you can say yum!

 

 

2. LEMON SCONES

Another light and flaky scone recipe only this time there is no competition with strawberries. Just pure lemon tartness with a sweet creamy glaze!

 

 

1. INDIVIDUAL BERRY TRIFLES

Last, but certainly not least…our ABSOLUTE favorite lemon dessert recipe of all! These individual trifles have layers of creamy lemon pudding, fresh berries, moist pound cake, and whipped cream. What could be better than that?
