Strawberry-Rhubarb Cobbler

A quick and easy dessert filled with tart rhubarb & sweet strawberries-with a buttery crumble topping!

Hello, sweet friends! I hope today’s post finds you well!

Normally I would be baking all kinds of recipes with rhubarb this time of year. But unfortunately, with the colder weather we had this spring, along with a few freezes our rhubarb plants did not amount to much. Rhubarb that’s been frozen is actually poisonous so the season in our garden was kind of a bust!

Thankfully, Mom has had plenty so this past weekend I went over to the farm and grabbed some so I could at least make a batch of jam and one of our favorite desserts!

Fruit crisps and cobblers are such a treat and this Strawberry-Rhubarb Cobbler is definitely a favorite!

It’s SO quick and easy to make which makes it the perfect dessert for unexpected guests. That is if we could HAVE unexpected guests. Which we’ve chosen not to have. At least until the new cases of COVID start to go down in our area instead of up.

And the best part is you don’t need any special ingredients. **TIP if you don’t have rhubarb check your local grocery. Many carry it in their produce sections while in season. (May thru September here in Minnesota).

To start you just cut up some rhubarb (about 2 cups) and fresh strawberries (about 1 cup) and put them in a bowl with a few other ingredients.

Like flour(for thickening), sugar, cinnamon, and a wee bit of salt.

Then in a separate bowl, you mix together the ingredients for the topping. That’s just 4 ingredients that I’m sure you have in your pantry!

Once that strawberry rhubarb mixture has sat just a bit, the juices will begin to come out of the fruit! But don’t worry. That little bit of flour we put in will help keep it from being runny.

All once you put the cobbler in the oven that butter, oats, and sweet brown sugar are going to magically turn into this golden brown-crunchy yumminess!

So you’re going to want to eat it straight from the oven. With a scoop of ice cream or fresh whipped cream.

And more cinnamon.

And a big spoon!

Ingredients

  • 2 cups rhubarb diced
  • 1 cup strawberries chopped
  • 1/8 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup white sugar
  • 1 Tablespoon water
  • 1 Tablespoon flour

Topping

  • 6 Tablespoons butter
  • 6 Tablespoons all-purpose flour
  • 1/2 cup quick oats
  • 1/2 cup brown sugar

Instructions

  1. Preheat oven to 350. Combine rhubarb, strawberries, water, flour, salt, sugar, and cinnamon in a large mixing bowl. Set aside. In a medium bowl add the topping ingredients and mix until it forms a crumbly mixture. Pour the rhubarb mixture into a greased 8x8 baking dish. Sprinkle the crumble mixture over the top. Bake for 40-45 minutes. Serve warm with ice cream or whipped cream.

I’m not going to lie. I’ve had this Strawberry-Rhubarb Cobbler for breakfast.

I mean why not? It has oatmeal and fruit and cream….so it’s breakfast food in my world.
