Strawberry Crumb Bars with Lemon Glaze
Enjoy those summer berries sandwiched between a sweet buttery crust and crumb topping!
Hello, friends!
Today I’m sharing a quick and easy dessert that will be perfect for those back yard barbecues and family outings this summer!
Of course, these delicious bars do have oatmeal and strawberries! SO…this breakfast loving gal doesn’t see why you couldn’t grab one and go in the morning too!
And did I mention they are SUPER easy to make?
The first thing you’re going to need are those plump juicy strawberries that are ever so abundant this year! I like to add lemon zest for some wonderful freshness, sugar for a wee bit of sweetness, and corn starch to thicken the juices.
And then there is that buttery crust which doubles as the crumb topping too! That is a blend of flour, brown sugar, oatmeal, oh yes, and butter. LOTS of butter!
One-third of that amazing mixture gets set aside for the top. The rest? Well, that is pressed ever so carefully into the bottom of a 9×13 pan. **TIP: Line your pan with parchment paper for easy removal and cutting!
Now those sweet strawberries get poured over top of that buttery crust.
Then just sprinkle the remaining crumb topping over the top and in the oven they go!
By the time the bars are ready to come out of the oven, your home is going to smell
D-E-L-I-C-I-O-U-S!!!
But we aren’t done yet. Oh no. The best part is yet to come!
It’s time to make that sweet lemon glaze! Which is basically two ingredients! Lemon + powdered sugar. Easy-Peasy, right?!
But there is something about that simple lemon glaze that just brings these Strawberry Bars OVER the top!
Every bite is filled with those sweet strawberries and butter crumb topping, and then when you think you’re taste buds can’t take any more…BAM you get that last burst of lemon!
Y-U-M-M-Y!!!!

Strawberry Crumb Bars with Lemon Glaze
A shortbread-like crust topped with fresh strawberries, crumble topping, and a lemon glaze
Ingredients
Crust/Crumb Topping
- 2 cups all-purpose flour
- 1 cup old-fashioned rolled oats
- 1 tsp baking powder
- 1 cup butter
- 1 cup brown sugar
- 2 eggs
- 2 tsp vanilla
Filling
- 4 cups fresh strawberries chopped
- 1/3 cup white sugar
- 1 1/2 Tablespoons cornstarch
- lemon zest **from one lemon
Lemon Glaze
- 1 cup powdered sugar
- 2 Tablespoon lemon juice **More depending on how thin you want the glaze
Instructions

Preheat oven to 350. Line a 9x13 pan with parchment paper. Combine dry ingredients for the crust in a large mixing bowl. (You could also use a food processor). Cut butter in with a pastry cutter until the mixture is crumbly and the butter is pea-sized. Combine eggs and vanilla in a measuring cup. Beat well. Pour over the crumble mixture. Mix with a fork until incorporated. Set aside 2 cups of the crust/crumb topping. Pour remaining mixture in the bottom of the baking pan. Press into place evenly. Meanwhile, combine the strawberries, sugar, cornstarch, and lemon zest in a medium bowl. Pour over the crust. Sprinkle with remaining crumble topping. Bake for 50-55 minutes or until crust and topping are golden brown. Mix the lemon glaze ingredients in a small bowl and set aside. Remove the bars from the oven and allow them to cool completely before drizzling the lemon glaze over the top. Lift Bars out of the pan using the ends of the parchment paper and cut into 18-square bars.
Recipe Notes
TIP: Spray the 9x13 pan with non-stick spray before lining with parchment paper. It will keep it in place.
Since it’s just Michael and I here right now, a whole pan of these luscious bars is just a wee bit too many sweets for our waistlines.
But the great thing is these bars DO freeze well. So we can enjoy them all summer long!
