Peanut Butter Blossom Cookies

The countdown to Christmas is on my sweet friends!

Just three more days!!!

I’m all done with my shopping and I have just a few more things to wrap and then I can check presents off my list.

And after yesterday, I can check baking off the list too!

Mom and I spent the day in the kitchen and made some of our favorite Christmas treats!

This year our family decided not to go all out with the Christmas baking like we usually do.

Some of us are trying to watch our waistlines (cough cough), and a few are just trying to be more disciplined with our sugar intake.

With that said there was one sweet treat that our family cannot do without for the holidays!

Christmas just wouldn’t be Christmas without these soft-peanut buttery cookies with the chocolate center!

But thanks to a few shall we say…mishaps, our family almost didn’t get these yummy cookies.

I guess mom and I were having too much fun and chatting WAY too much because the first batch of cookies we put in the oven didn’t exactly turn out the way they were supposed to.

In fact, they all ran together and ended up being one cookie.

Now sure, I can see this happening if mom and I were baking for the first time, or even baking these cookies for the first time, but that was definitely not the case.

And yet I’ll admit, at first we both a little stumped. We just couldn’t figure out what we’d done wrong.

Then suddenly it hit both of us at the same time!

We’d forgotten to add the most important ingredient!

The peanut butter!

After we’d had a good laugh we added in the peanut butter, but the dough still didn’t seem to be the right consistency. It was just a bit too gooey.

I checked the recipe once more and read that it called for 2 1/2 cups of flour and that’s exactly how much I’d put in.

Or had I?

Wrong again!

Mom had accidentally handed me a 3/4 cup instead of the 1 cup so we were 1/2 cup short on the flour!

That might not seem like a lot, but it sure made the difference!

We both had another good laugh at ourselves, but from then on we decided it might be best if we chatted less and paid attention to our baking more!

After all, our family was counting on us to produce some yummy treats and we certainly didn’t want to let them down.

And we didn’t!

We have just the right amount of sweet to take us into the new year and beyond!

Peanut Butter Blossom Cookies

Ingredients

  • 1 cup softened butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup creamy peanut butter
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 bag chocolate kisses candy

Instructions

  1. Line a baking sheet with parchment paper. Set aside. Cream together butter, white sugar, and brown sugar in a large mixing bowl. Add eggs one at a time. Add in vanilla and peanut butter. Combine flour and soda in another bowl. Slowly add the dry mixture to the wet. Mix until just combined. Chill the dough for at least 1 hour. Preheat oven to 350. Scoop a Tablespoon of dough into your hand and roll it into a ball. Place on the baking sheet and press down slightly with a fork. Bake in the oven for 10 minutes. Remove and add one chocolate candy to the center of each cookie. Return the cookies to the oven for 2 minutes. Remove and allow the cookies to cool slightly before moving them to a wire rack. Cool completely before storing in an air-tight container. Makes 4 dozen cookies.

  1. That was funny – sounds like something I would do even if I was baking by myself. It’s so easy to get side tracked in the kitchen. Those cookies look wonderful – I’ve done zero baking this year mainly because it’s just Robert and I and we’ve been taking in less sugary treats.
