Okay. So no, there really isn’t anything ‘spooky’ about this snack mix. Unless of course, you find gummy worms and corn candy spooky.

Spooky? No.  Addicting? Yes!!!

Because it is SOOO darn good. You’ll seriously have a difficult time not shoving your hand into the bowl and grabbing a BIG handful.

Again. And again. And AGAIN!

I’m just ‘assuming’ this, because of course whenever I make this fun snack at Halloween, I always give it away. (cough, cough)

Not one nibble or bite of that apple cinnamon Chex cereal, buttery-salty pretzels, or peanut-buttery-chocolaty Reese’s pieces goes in this mouth. Oh no!

And definitely, not any of that caramel-coated popcorn or candy corn either. Heaven FORBID NO!

Okay, Okay, so maybe I’ve tasted a piece or two. And yes, maybe those Apple Chex and caramel-coated popcorn mixed together tastes JUST like a caramel apple. And yes, maybe, just maybe, mixing sweet and salty is one of my absolute favorite snack combinations.

But NOT one kernel. NOT one corn candy. Went into my mouth while photographing it.

Not ONE of any of it.

Handfuls. Yes, Handfuls.

BUSTED!

what do you need to make a spooktacular Halloween party mix?

how to make the snack mix

First, we need to start by making up a BIG batch of Homemade Caramel Popped Corn!

I start by using about a 1/4 cup of kernels and pop it up in my air-popper. This will make about 7-8 cups of popped corn.

Next, I add the ingredients for my caramel sauce into a medium saucepan. (full instructions for this in the recipe below.)

  • Butter
  • Brown Sugar
  • Light Corn Syrup
  • Vanilla
  • Baking Soda

When the caramel sauce is done I pour it over the popcorn and stir it around until the popcorn is thoroughly covered. Then I spread it out on a baking sheet that I’ve lined with parchment paper. The popcorn will bake in a low temp oven (200) for about 45 minutes and then it needs to completely cool before we move on to the next step.

Which is basically throwing all the other ingredients in the bowl with the popcorn and mixing it all up.

The caramel on the corn will still be ooey and gooey and some of it will stick to the other ingredients. Especially the Apple Chex. (Think Caramel Apples, folks).

The BEST thing about this snack mix though is the combination of salty and sweet! I’ve always been a fan of corn candy and peanuts and this takes that to a WHOLE new level!

This is truly one of those snacks that you can’t just eat a handful of. Put it out at your Halloween Party this year and everyone will be going back for more, I guarantee it. And the littles? Well, they are GOING to LOVE it too!

I know it’s frowned upon to give out homemade goodies, but I bet your friends and family would LOVE a bag of this treat to take home with them too!

A fun & spooky- salty-sweet Halloween snack!

Ingredients

For the Caramel Corn

  • 7 cups popped popcorn
  • 1 cup brown sugar
  • 1/4 cup light corn syrup
  • 1/2 cup butter
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon baking soda

For the Snack Mix

  • 1 1/2 cups dry roasted peanuts
  • 1/2 15 oz bag pretzels
  • 1 10 oz bag Halloween M& M's
  • 1 3.5 oz bag candy corn
  • 1 4 oz bag candy pumpkins
  • 1 12 oz box Apple Cinnamon Chex cereal
  • gummy worms

Instructions

To make the Caramel Corn

  1. Preheat oven to 200. Line 2 baking sheets with parchment paper.

  2. Combine the butter, brown sugar, and light corn syrup in a medium saucepan.

  3. Bring to a boil, then lower the heat and allow to simmer for 5 minutes. (Stir often and watch carefully so it does not burn.)

  4. Remove the sauce from the heat and add in the baking soda and vanilla. Stir until incorporated.

  5. Pour the popped corn onto the lined baking sheets and spread out evenly.

  6. Pour the caramel sauce over the popped corn. Place in the oven.

  7. Bake for 45 minutes-stirring every 15 minutes.

  8. Remove the caramel corn from the oven. Allow to cool completely.

To Make Snack Mix

  1. Add the caramel corn to a large bowl. Add the remaining ingredients and gently stir until combined. Store in an air-tight container.

how do I store the snack mix?

To keep the snack mix fresh I store it in an air-tight container. Generally speaking, if it’s kept in a cool dry location it should last for about 1 week. But it won’t. Guaranteed. Because it will be gobbled up WAY before then!
