Peach & Blueberry Crisp

A summertime dessert filled with fresh peaches & blueberries-topped with a buttery oatmeal crumble.

Who doesn’t love a good fruit crisp? Okay, so maybe some folks don’t call them crisps. Maybe they like to call them crumbles. Or even cobblers.

Whatever you call them, these quick and easy desserts are so delicious and truly versatile,  so what’s not to love?

The best part? You can use whatever fresh fruit is in season to make this dessert. (Heck, you can even use canned or frozen if you don’t have fresh on hand!)

Peaches are definitely one of my favorite summertime fruits. And,  since they are plentiful at our local grocery right now, I decided to pick up a couple of pounds this past weekend.

I was going to make a pie with them, but then I remembered I had some blueberries in the fridge that needed to get used up. So I decided to make this delicious Peach & Blueberry Crisp instead.

Now don’t get me wrong, there is nothing like a good ole’ fashioned Peach Pie. But this crisp? Well, it’s kind of amazing too.

I mean what could be bad about juicy fresh peaches, plump blueberries, and a crumble topping filled with butter, oats, brown sugar, and almonds? Oh and let’s not forget a sprinkle of warm cinnamon! Cause you can’t have ANY crisp without cinnamon! Am I right?!

what is the secret to the perfect crisp?

For me? I would have to say consistency. A good fruit crisp will be juicy enough to spill over just a wee bit as it bakes in the oven. ( I always put a baking sheet underneath just in case). But not SUPER juicy so that the fruit gets mushy and the ‘crisp’ isn’t crisp anymore!

how do you get your crisp to be the perfect consistency?

#1- Adding a wee bit of cornstarch to the fruit mixture. Not a lot, just enough to thicken the juice from the fruit that will be ever so plentiful once you mix the fruit with sugar.

#2-Adding oatmeal to your crumble topping. Oatmeal adds that ‘extra’ crunch factor to the crumble! It also absorbs all that ‘extra’ juice in every bite full!

skin or no skin on the peaches?

It’s whatever you prefer, really. Me? I prefer NO skin. It’s a texture thing. If you want no skin, just blanch the peaches for about 2 minutes in a pot of boiling water. Then place them in a bowl of ice-cold water and the skins will come right off!

Peach and Blueberry Crisp

Ingredients

Fruit filling

  • 4 medium peaches skin removed and sliced **See how to remove skins below.
  • 1 cup blueberries
  • 1/2 cup white sugar
  • 2 teaspoons cornstarch
  • 2 Tablespoons lemon juice

For Crumble Topping

  • 1 cup old fashioned oatmeal
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 stick softened butter
  • 1 teaspoon cinnamon
  • 1/2 cup sliced almonds optional
  • **More cinnamon to sprinkle on top optional

Instructions

  1. Preheat oven to 350. Combine peaches, blueberries, cornstarch, sugar, and lemon juice in a large mixing bowl. Stir well.

  2. Pour fruit mixture into an 8x8 baking dish.

  3. Combine ingredients for crumble topping in a large mixing bowl using a pastry cutter.

  4. Sprinkle the crumble topping over the fruit mixture evenly.

  5. Sprinkle with more cinnamon (optional)

  6. Bake in the oven for 45 minutes or until topping is golden brown and fruit is bubbling and tender.

  7. Remove from the oven and allow to cool 15 minutes. **You can serve warm but note that juices will not thicken up until slightly cool.

Recipe Notes

**To remove the skin from the peaches:

Fill a large saucepan two-thirds full with water. Bring to a boil on a stovetop. Add peaches to boiling water. Lower heat and let simmer for 2 minutes. Remove and immediately place in a bowl of ice-cold water. Using a paring knife, remove the skin from the peaches. **It should come off easily.

As I mentioned earlier, fruit crisps are SO versatile.

 

If your not a fan of peaches and blueberries, just swap out them for apples & cranberries, peaches, and pears, pears and plums, or blackberries, blueberries, and raspberries!  Or use just one fruit, like apple or cherry!

Whatever berries or fruit you choose, don’t forget to serve this fruit crisp with a scoop of your favorite ice cream or freshly whipped cream!

    Tastes great with a mix of berries and peaches.
    Questions:
    Does this need to be refrigerated ?
    Also photo #3 depicts the crumble in a bowl.
    It has sliced almonds in it, but none are in the recipe or listed as possible add-ins. None of the other photos show almonds in crumble topping.

  5. Hello, Sanj! Thank you! And yes, I do mention the almonds earlier in the post, but sadly I did omit the ingredient in the actual recipe. My apologies. I have corrected the recipe but did list the almonds as an optional ingredient.
