Ham & Cheese Breakfast Strata

a quick and easy make-ahead egg dish using holiday leftovers!

Where in the world has the time gone?

We have already hosted two small gatherings with friends and family, but we still have a couple more in the next two weeks.

I’ve been busy planning each of the menus and I’ll be doing the shopping for them later this week.

Now if your family is like ours, you will probably enjoy a delicious ham sometime during the holidays. Whether on Christmas Eve, Christmas day, or even New Years’ eve or day.

We usually enjoy a spiral ham on Christmas eve, and inevitably we always have leftovers. So one of the ways I try and use up all that yummy pork is by using it in a dish for Christmas day brunch.

One of my favorite dishes is the recipe I’m sharing with you all today.

Ham & Cheese Breakfast Strata!

So if you’re not familiar with what a Strata is, here’s the short answer. It’s a breakfast casserole made with bread.

There are a LOT of reasons why this breakfast/brunch dish should be on your menu this holiday season or any day for that matter. But here’s just a few.

#3 It can be made ahead of time which saves YOU the cook SOOO much time and stress!

Oh, and did I mention it’s a delicious way to use up leftovers? I mean what’s not to love about that?

WHAT DO YOU NEED TO MAKE HAM & CHEESE BREAKFAST STRATA?

  • Bread
  • Ham
  • Eggs
  • Butter
  • Milk
  • Broccoli
  • green onion
  • Sharp Cheddar Cheese
  • dry mustard
  • smoked paprika
  • Parsley
  • salt & pepper
how to make the strata:

First, you’ll need to prep your baking dish. I like to use butter, but you can use a non-stick spray as well.

Next, you’ll want to cut up your bread into bite-sized cubes and place them in your casserole dish. You can use whatever bread you have on hand but make sure it’s not fresh. You’ll want it to be a bit dried out so it soaks up all that creamy custard!

Then layer on the ham, broccoli, green onion, and cheese.

Combine the milk and eggs and beat until thoroughly whipped. Add in your seasonings and mix until combined. Pour the mixture evenly over the rest of the ingredients. Then, in a small bowl, add more bread cubes, and coat with melted butter. Add in a bit more cheese and sprinkle over the top of the casserole.

At this point, you can cover and refrigerate or overnight. Or place it in the oven and bake it for 1 hour or until the Strata is golden brown and bubbling. (I usually insert a toothpick and make sure it comes out clean.)

This recipe is PERFECT for Christmas morning and makes enough to serve at least 10-12 people!  I usually serve it with a winter fruit salad, roasted potatoes, and a sweet treat like my Cranberry-Orange bread, or Banana Streusel muffins.

Ingredients

  • 4 cups bread (cubed) Italian, French, Baguette,
  • 2 cups diced ham
  • 2 1/2 cups chopped broccoli
  • 2 1/2 cups shredded Sharp Cheddar cheese
  • 6 eggs
  • 3 1/2 cups milk
  • 4 green onion diced
  • 1 teaspoon dry mustard
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon dried parsley
  • salt & pepper to taste

For topping

  • 1 cup bread (cubed)
  • 2 Tablespoons melted butter
  • 1/2 cup shredded Sharp Cheddar cheese

Instructions

  1. **DISH CAN BE MADE A DAY AHEAD

    When ready to make:

  2. Preheat oven to 350. Grease a 9x13 casserole dish

  3. Add the bread crumbs to the bottom of the casserole dish.

  4. Layer on the ham, broccoli, onion, and cheese.

  5. Combine the milk and the eggs in a large bowl. Whisk until completely blended. Add in dry mustard, paprika, and parsley. Mix until combined.

  6. Pour the egg mixture evenly over the casserole.

  7. Combine more bread crumbs and melted butter in a small bowl. Stir until coated. Add in remaining cheese. Sprinkle over the casserole.

  8. Bake the casserole for 1 hour or until a toothpick inserted in the center comes out clean. Remove from casserole from the oven and let sit for 5 minutes before serving.
