The weather has been absolutely GORGEOUS, here in our neck of the woods!  Yesterday 
the temps were at a record high of 80 degrees!!!  Now, of course, this isn’t going to last
(50’s next week)-so I decided to take full advantage of the glorious weather in the afternoon
 and get caught up on some outdoor chores.  The lawn was raked-gardens were cleaned
 out-porch furniture was dusted off-and when it was finally time for a break…….

I whipped up one of my favorite ‘summertime’ salad’s for lunch!  I’m not sure if it’s
 the crunchiness of the celery-the tartness of the cranberries-or the creamy dressing,
 but I just can’t get enough of this YUMMY salad!!

And it’s SO easy to make!!!


Here is what you’ll need:

Cranberry-Chicken Salad

Ingredients:

               3 cups cooked chicken (diced) **I used leftover roasted chicken from the night before)
               1/4 cup dried cranberries
               1/2 cup celery (diced)
               3 Tablespoons chopped red onion
               6 Tablespoons mayonnaise
               2 teaspoons fresh lemon juice
               1/8 teaspoon curry powder
               1/2 teaspoon salt
               1/2 teaspoon pepper
               Apples and nuts are optional

Directions:

             Combine mayonnaise and lemon juice in a small bowl.  Add curry powder


             salt and pepper.  Add chicken, celery, cranberries, and onion.  Mix well. 
             Serve over a bed of lettuce, or on your favorite bread!  Serves 4. (If you don’t eat the
             whole bowl yourself!!)

  2. Thank you, Karen! It is so YUMMY!! I seriously could have eaten the whole darn bowl-but I was nice and saved some for hubby!! 🙂
