Bruschetta with Mozzarella!
A quick and easy, oh-so summery recipe that you can serve as an appetizer, snack, or even light lunch!

Today’s recipe is hands down one of my FAVORITE summer recipes!
One of the main reasons is how amazingly summery and fresh all the ingredients combined taste!
Especially what I consider one of the best food combos EVER!
Tomatoes and Basil!
Since we don’t have a garden this year, we took advantage of a great local farmers market this weekend! We scored big on some fresh herbs (including the basil) along with some tomatoes, green beans, and even local honey which we haven’t had in months!

- Red Onion
- Garlic
- Balsamic Vinegar
- Olive Oil
- Salt & Pepper
- Baguette
- Fresh Mozzarella cheese
- ***OPTIONAL: Balsamic Glaze
equipment you’ll need:
- Mixing Bowl
- Bread Knife
- Slotted Spoon
- 9×13 Baking Sheet
- Small Saucepan
how to make bruschetta and mozzarella
- Chop the tomatoes and place them in a bowl.
- Add the diced onion, minced garlic ribboned basil, and salt & pepper
- Drizzle with balsamic vinegar and olive oil.
- Stir mixture. Cover and set aside.
- Meanwhile, slice your baguette into 1″ thick slices. TIP: Depending on how many people I want to serve, I may cut the baguette in half and use one half for now and freeze the other for later. Half of a baguette should give you about 12 slices or 24 for a full loaf.
- Add 3 Tablespoons of olive oil to a small saucepan. When oil begins to sizzle place 1 garlic clove cut in half into the oil. Allow the oil to simmer for 30 seconds. Remove the garlic cloves.
- Brush the olive oil over the tops of the baguette slices.
- Broil for 1-2 minutes or until the tops are golden brown.
- Flip the baguette slices and brush with remaining olive oil. Then sprinkle with freshly shredded mozzarella.
- Place them back in the oven and broil for 1-2 more minutes or until cheese is melted and golden brown.
- Using a slotted spoon to top the baguette slices with the tomato mixture.
- Serve immediately.
This Bruschetta with Mozzarella is SOOOO darn good just like it is.
But I like to take it OVER THE TOP with just a wee bit of Balsamic Glaze drizzled over the top. It’s totally optional of course, but I think it adds a bit of something, something special.

Bruschetta with Mozzarella
A quick and easy appetizer topped with fresh tomatoes, basil, and melted mozzarella!
Ingredients
- 2 cups cherry tomatoes quartered
- 1/4 cup red onion diced finely
- 4 garlic cloves (divided)
- 4 Tablespoons Olive Oil (divided)
- 8 basil leaves (chopped)
- 1 Tablespoon Balsamic Vinegar
- 1 Baguette
- 8 oz fresh mozzarella sliced or shredded
- Balsamic Glaze (optional)
Instructions

Add the tomatoes, 3 cloves of garlic (minced), 1 Tablespoon of Olive oil, balsamic vinegar, onion, and basil to a medium bowl. Stir until tomatoes are coated. Cover and set aside or place in refrigerator. When ready to serve- Cut the baguette into 1/2" slices. Add 3 Tablespoons of Olive oil to a small saucepan. Place on the stovetop and turn burner on medium heat. When oil begins to sizzle add 1 garlic clove cut in half. Let simmer for 30 seconds, then remove the saucepan from the heat. Brush both sides of the baguette slices with garlic-infused olive oil. Place the slices on a 9x13 baking sheet. Turn the oven onto broil and place the baking sheet in the oven. Allow the slices to broil for 2-3 minutes or until the tops are golden brown. (Make sure to watch closely). Flip the baguette slices over and place a slice of fresh mozzarella or a Tablespoon of shredded onto the top of the baguette slice. Put the baguettes back under the broiler for 1-2 minutes or until cheese has melted and turned golden. Remove the baguettes from the oven. Place a spoonful of the tomato mixture over the top of each slice and serve immediately. (Optional) Drizzle the tops of each with balsamic glaze.
We love to serve Bruschetta and Mozzarella as a quick and easy appetizer for friends and family. But it’s also great for a light lunch or as a side to something you’re grilling this summer.
