Broccoli Salad
A quick salad filled with fresh broccoli, sliced almonds, & raisins+a creamy homemade dressing!
Broccoli has never been a vegetable my family cared much for. You can bet that whenever I would put out a platter of fresh veggies with their favorite dip, broccoli would always be the only remaining veggie left. I would try to roast it, put it in casseroles, and even their favorite Italian Pasta Salad, and they still wouldn’t eat it. And then one day a friend of mine at work brought a dish to pass for our company potluck.
Guess what the main ingredient was?
Yep, that’s right.
Broccoli.
I’ll be honest, I’ve never been a fan of the stuff either, but it’s supposed to be good for you, so I usually tried to choke down a few pieces whenever it was served.
But not this time. This time I could seriously have eaten the whole darn bowl of broccoli, along with everything else that was in the salad!
 what you’ll need:
how to make broccoli salad:
  1. Wash the Broccoli and cut it into bite-size pieces
  2. Slice the red onion thinly
  3. Add the Broccoli, onion, raisins, and almonds to a large salad bowl.
  4. Fry the bacon
  5. Combine the mayo, sugar, and vinegar to make the dressing
  6. Pour the dressing over the salad
  7. Mix
  8. Crumble the bacon over the salad
  9. EAT!!!!
I think the dressing is actually my FAVORITE part of this salad! It’s SUPER creamy and adds the perfect amount of tang to the salad!
By the way. Did I mention my family LOVES this salad?
Yes, and they don’t even mind that it’s filled with broccoli. In fact, this salad is usually the only way I can get Michael to eat broccoli…EVER!
Oh yes, and did I mention you can crumble a whole bunch of crispy bacon over the top too?
Yes, yes you can.
And if you don’t like raisins, swap them out for dried cranberries.
Don’t have any almonds? Use walnuts, pecans, sesame seeds, anything that has a bit of a crunch factor!
Here’s the recipe for my broccoli salad!!!

Broccoli Salad

A salad filled with crisp broccoli, red onion, almonds, and raisins-covered with a sweet tangy dressing.

Ingredients

  • 3 lbs broccoli florets about 2 medium bunches
  • 2/3 cup sliced almonds
  • 1/2 cup raisins
  • 1 medium red onion sliced thinly
  • 5 slices of bacon cooked and crumbled

Dressing

  • 1 cup mayonnaise
  • 3 tablespoons apple cider vinegar
  • 1/4 cup white sugar

Instructions

  1. In a large mixing bowl combine broccoli, raisins, almonds, and red onion. Set aside. Fry bacon in a medium fry pan until crisp. Place on a paper towel-lined plate. Let cool. Meanwhile, combine dressing ingredients in a small mixing bowl. Whisk together until smooth. Pour dressing over broccoli salad. Mix thoroughly.  Crumble bacon and sprinkle over the top of the salad. Serve chilled.

This  Broccoli Salad is perfect for family gatherings, picnics, company potlucks, or lunch served with a big slice of crusty bread!

  1. I for sure will make this. Looks delicious. I might try a little maple syrup in the dressing instead of sugar and maybe sub half of the mayo for Greek yogurt! Can’t wait to try it!

  2. I have made Broccoli Salad for decades. Try adding a couple of large handfuls of fresh seedless RED or GREEN grapes to the mix. Small ones are best. Also I like to use TOASTED SLIVERED ALMONDS. Gives more crunch. And I put a squirt of French’s Mustard into the mayo mix. Gives a nice buttery colour and flavour. And I use GREEN ONIONS vs RED. But yours sounds terrific too. I believe there is a myriad of versions of this salad out there. Thanks for sharing.
