Baked Spiced Pear Donuts with Vanilla Glaze

Summer is still in full force here in Minnesota. Yesterday we had temperatures in the upper 80’s and some pretty heavy thunderstorms blew in late last night.

And although I’m still very much enjoying summer, I won’t deny that I’m getting excited about fall as well!

It truly is my favorite season.

So I thought I would combine a little bit of late summer and a little bit of fall into one VERY delicious recipe and share it with you all today!

Pears have definitely been in great abundance at our local grocery this year.

Unfortunately, pears are one of those fruits that I’m just not a big fan of for baking. Oftentimes they are not very ripe when I buy them. And by the time they have ripened enough to have any flavor at all, they are actually too ripe to bake with.

But a few days ago I stopped at our local coop and I found some pears that were absolutely PERFECT! So I grabbed a dozen and brought them home to use for a couple of recipes I’ve been wanting to create.

I’ll be sharing a yummy bread with you in another post, but today I wanted to share these moist and absolutely SCRUMPTIOUS baked donuts!

These donuts are truly a delicious wonder, my friends.  So light and fluffy. And each one is filled with chunks of sweet pears and the wonderful warmth of spices like cinnamon, ginger, nutmeg, and even a wee bit of cloves. But I didn’t stop there.

Oh goodness no. Because you can’t have a donut without a glaze now can you? Not these donuts you can’t. So I drizzled them with my creamy vanilla glaze and sprinkled them with even more spices.

what you’ll need to make baked spiced pear donuts:
  • Donut Pan- I use this one. It’s reasonably priced and you get two!!! If you don’t have a donut pan or don’t want to buy one you could definitely use a muffin tin and rolled-up foil for the hole.
  • Parchment paper
  • Baking rack
  • Pastry Bag (or you could use a gallon Ziploc bag and cut a small hole at the end.)
  • Mixing bowls
  • Whisk
ingredients:
  • Flour
  • Sugar
  • Baking Powder
  • Egg
  • ButterMilk(or substitute by adding 1 Tablespoon vinegar to milk)
  • Pears
  • Dried Ginger
  • Cinnamon
  • Nutmeg
  • Cloves
  • Butter
  • Powdered Sugar
  • Half and Half
  • Vanilla
how to make baked spice donuts:
  1. Spray the donut pan with non-stick spray. Set aside.
  2. Combine the flour, sugar, baking powder, and spices in a large mixing bowl.
  3. Add in the buttermilk and egg.
  4. Stir until combined.
  5. Pour in melted butter.
  6. Stir
  7. Fold in pears.
  8. Scoop the batter into a pastry bag or large Ziploc bag. (cut a small hole in the Ziploc)
  9. Fill each donut pan 3/4 full.
  10. Bake in a preheated oven (375°) for 10-12 min or until a toothpick inserted comes out clean.
  11. Allow donuts to cool slightly before removing them from the pan.
  12. Place donuts on a baking rack and allow them to cool completely.

But before they cool completely I start mixing my ingredients for the vanilla glaze. And when it is OH SO creamy and has reached that perfectly drizzling consistency I pour it over each donut and then lightly sprinkle them with a wee bit of cinnamon.

Of course, you could TOTALLY skip this step and just gobble down those golden brown, pear, and spiced-filled donuts without all that luscious glaze.

But why would you want to do that?

After all, didn’t I mention…these donuts are baked so you’re saving a few calories and fat there, right?

Ingredients

For the Donuts

  • 1 1/2 cups flour
  • 1/2 cup white sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon dried ginger
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon cloves
  • 2/3 cup buttermilk
  • 4 Tablespoons butter melted and cooled
  • 1 egg
  • 1 pear peeled, cored, and diced

For the Glaze

  • 2 cups powdered sugar
  • 3 Tablespoons half and half
  • 1 1/2 teaspoons vanilla

Instructions

  1. Preheat the oven to 375.

  2. Grease the donut pan and set it aside.

  3. Combine the dry ingredients for the donuts in a large mixing bowl.

  4. Add in the buttermilk, egg, and melted butter. Stir until combined.

  5. Fold in the pear.

  6. Scoop batter into a pastry bag. Fill the donut pan 3/4 full with batter. Smooth tops with the back of a teaspoon.

  7. Bake in the oven for 10-12 minutes or until a toothpick inserted comes out clean. Remove the donuts from the oven and allow them to cool slightly. Remove the donuts from the pan and place them on a baking rack to cool.

  8. Meanwhile, combine ingredients for the glaze in a medium bowl. Whisk until smooth. Drizzle the glaze over the donuts and sprinkle with more cinnamon.

  9. Store the donuts in an air-tight container in the refrigerator for up to one week, or freeze.

These yummy donuts have the best of both summer and fall. And they are so good with your favorite morning coffee or tea.

Storing the donuts:

I like to place each donut on a square of parchment paper and then store them in an air-tight container in the refrigerator for about a week. You could also place them in the freezer and they will last for several months.

TIP: If you do freeze them I recommend not frosting them until they have thawed overnight and are ready to serve.
