Baked Blueberry Donuts with Lemon Glaze

Can I tell you a secret?

Okay.

Here goes.

I’ve never met a donut I didn’t LOVE!

There now you know. I’m a sucker for donuts. ALL donuts. Cake donuts, jelly donuts, chocolate-covered donuts, glazed donuts. Like I said…All donuts!

Back in the day, I just couldn’t help myself. Every time I drove by our local bakery I just HAD to stop in and grab one to go!

But sadly, the days of eating all those fried donuts are gone. At least for this gal.

 

Of course, I’ll never be able to completely say ‘goodbye’ to those yummy little rings of deliciousness! So…I decided to start making my own donuts!

Baked. Not fried!

And I couldn’t have been more surprised at how EASY it was to make them!

Today I’m going to be sharing one of my favorites. Blueberry Donuts! But not just ANY blueberry donut! Oh goodness no! Because these Blueberry Donuts are covered in a sweet-lemony glaze that will tantalize your tastebuds and have you asking for more!

The best part about making these donuts is that you don’t need any special ingredients! Just simple pantry staples and of course, blueberries!\

can I use frozen blueberries?

Yes. Just don’t thaw them or they will get mushy!

I would definitely recommend using a donut pan (mine were super inexpensive) but you could definitely use a muffin pan too. You will just have to add on a few more minutes of baking time.

Here are a few more tips I’ve learned along the way!

  • Don’t overmix your batter! Just stir until combined or you will have dense and very tough donuts, instead of these light and fluffy ones!
  • Don’t overfill your pan. I recommend filling 2/3 full to give the donuts room to expand nicely but not bubble over.
  • Allow the donuts to cool slightly but not completely before glazing

Speaking of that glaze…it’s just a handful of ingredients, but it’s so scrumptious your going to want to LICK the bowl! I guarantee it!

Baked Blueberry Donuts with Lemon Glaze

A light and fluffy donut filled with fresh berries and topped with a sweet lemon glaze

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup white sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 2/3 cup buttermilk
  • 1 egg
  • 4 Tablespoons melted butter cooled
  • 2/3 cup blueberries

Lemon Glaze

  • 2 cups powdered sugar
  • 1/3 cup lemon juice
  • lemon zest (from the lemon)
  • 2 Tablespoons melted butter (cooled)

Instructions

  1. Preheat the oven to 375. Grease your donut pans and set them aside. Combine your dry ingredients (flour, sugar, baking powder, and cinnamon in a large mixing bowl. Add egg, buttermilk, and melted butter. Stir until just combined. (Do not overmix). Gently fold in blueberries. Using a spoon, fill each donut pan 2/3 full. Bake for 10-12 minutes or until a toothpick inserted comes out clean. Meanwhile, combine the ingredients for the glaze and whisk until smooth. Remove the donuts from the oven and allow them to cool for 5 minutes before removing them from the pan. Drizzle glaze over the still-warm donuts and allow to cool before storing in an airtight container.

I make these Blueberry donuts for a special weekend grab and go breakfast or to snack on with my afternoon coffee. They also are perfect with whatever you are planning for a special family brunch! And you’ll probably need to make an extra batch cause the kiddos will be coming back for more. Heck, YOU will be coming back for more!
