Sweet and Savory Butters

I’m sharing two of my favorite flavored butters! One is slightly sweet with a wee bit of spice and the other is savory and packed with fresh herbs!

Today I’m talking all things butter!

Yes, you read that right! Sweet-sweet butter. (Oh, how I love thee! 🙂

Years ago, when I was just a wee girl in third or fourth grade, our class went on a tour of a local creamery.

Now of course I grew up on a dairy farm, so I knew where butter came from. But the truth was, I had never seen how it was made!

I can tell you right now, if you’ve never seen it, you really must!! Even now with all the technology, the process is truly fascinating!

Now that I’m all grown up, I still like to get the freshest butter possible, so we go about every three months to a local creamery in NE Iowa (just a 30-minute drive) and buy up a bunch and then freeze it.

I use both salted and unsalted butter. I prefer salted, mostly because the butter we buy is not overpowering with salt like some are. But I do like to use unsalted for certain bakery recipes.

But today I’m sharing two recipes where I am actually ADDING something to that delicious butter, so let’s get started!

First, let’s talk Savory Butter!

I like to use this flavored butter for melting over corn on the cob, chicken, steak, and even a baked potato! It starts with 1 stick of room temperature (not melted) butter.

Next, fresh herbs. LOTS, & LOTS of fresh herbs! My choices? Rosemary, Basil, Lemon Basil, Thyme, and Oregano! But again, you can use whatever combination of herbs you like! And to add a bit of freshness, I throw in the zest of 1 lemon.

I like to chop my herbs up real fine so I can pack in as much as possible. (About 1/4 cup).

And then mix it all together!

When everything is well combined I scoop the butter onto a piece of parchment paper and roll it up into a log, twisting each end to close. Then I place it in the freezer for about 30 minutes or until it hardens up a bit.

 

Other savory variations
  • Garlic & Herb (1 stick of butter+1/4 cup favorite herbs + 1 clove minced garlic) ***Great on French or Italian bread and roasted until golden brown!
  • Lemon Pepper (1 stick of butter + 1 Tablespoon Lemon Zest + 1 Tablespoon Lemon Juice + 1/2 tsp ground black pepper) ***Perfect for chicken, fish, and salmon!
  • Bacon & Chive (1 stick of butter + 1 Tablespoon Fresh Chives (chopped) + 1 slice of cooked bacon (chopped finely) ***Amazing on a baked potato, fish, or steak!

 

There are so many variations of savory butters I could go on for days, but here’s the plain truth! You can create whatever flavored butter your little butter lovin’ heart desires!

You just can’t go wrong, it’s BUTTER!

Speaking of which let’s talk my favorite kind of flavored butters! Sweet Butters!

This Spiced Maple butter is OVER THE TOP delicious, my friends. And again. All you need are simple ingredients. Butter (1 stick) maple syrup (1 Tablespoon) (the good stuff), cinnamon (1/2 teaspoon), and allspice (1/4 teaspoon)!

This sweet and spicy butter is delicious over pancakes (with more maple syrup of course), waffles, scones, muffins, or even just a slice of toast!

And if you’re looking for more variations of sweet butters, look no further!

  • Cranberry-Orange- (1 stick of butter+1 Tablespoon Orange Zest+1/4 cup finely chopped dried cranberries+1 Tablespoon Honey)***Delicious on pancakes, waffles, and even fish or chicken!
  • Cinnamon Sugar- (1 stick of butter+1 teaspoon cinnamon+1 teaspoon brown sugar) ***Try it on toast, oatmeal, Bagels, and scones!
  • Pumpkin Spice- (1 stick of butter+ 1 teaspoon pumpkin spice+ 1/4 cup pumpkin puree+2 Tablespoon honey) ***Scrumptious on pancakes, waffles, biscuits, bagels, and toast!
can flavored butters be frozen?

Yes! And most will last for two-three months. But don’t worry. You’ll have it eaten by then!

These sweet and savory butters will make AWESOME homemade gifts too! I LOVE to wrap them in pretty papers and tie the ends with raffia or ribbon. Then add them to a basket filled with meats and cheeses, breads, pasta. You name it. These butters go with EVERYTHING!

  6. Thank you so much, Michelle! The herb butter is AMAZING on potatoes! We love it on baked potatoes, but I also use it when I fry up hashbrowns or grilled potatoes too! And yes, You must try the cinnamon! I just had some on a bagel this morning! YUM!
