Creamy Cucumber salad

A creamy summer salad filled with cucumbers, red onion, fresh dill, and a light tangy dressing.

Summer may not officially be here, but as far as mother nature is concerned, it’s here!

The temperatures are heating up (84 today) and so is the humidity so when it comes to dinner, hubby and I are just fine with lighter fare.

Tonight we plan on grilling out and I’m whipping up the perfect side to go along with our Lemon-Garlic Tilapia.

 

This creamy cucumber salad is one I’ve been making for many years. (I know, I’m aging myself again!) It’s a family favorite, and it’s my favorite because it is so easy to make!

I usually use English cucumbers for this salad because #1 I don’t have to peel them, and #2 they are a bit sweeter-but our local grocery didn’t have any in stock so I picked up three medium-size cukes instead. Peeling is an extra step of course, but it gave me a few more minutes in air conditioning so it was worth it. 🙂

I also use an entire medium red onion because, well, I LOVE red onions! And don’t forget plenty of salt and pepper! (Can never have too much pepper).

Fresh dill is a MUST in this salad! Dry just won’t do! I picked this right from my garden and it smells divine! I just roughly chop it up and throw it on in!

But the best part of this salad is hands down the dressing! Light. Creamy. Tangy. Yes, please to all of the above!

 

 

This Creamy Cucumber Salad is the perfect side to steaks, chicken, or even brats and hamburgers!

How long can you store this salad?

The cucumbers do break down in the vinegary dressing within a few days, so if you’re into crunchy cukes like me, you’ll want to eat it up before then. But don’t worry. Your family is going to love it so it won’t be around that long!

**Note that the juices from the cucumbers are drawn out by the sugar added in the dressing so you will end up with more liquid and a thinner dressing after about 30 minutes in the refrigerator.  You are welcome to drain off some of the liquid but why? It’s so yummy!!!

Creamy Cucumber Salad

Ingredients

  • 3 medium cucumbers peeled and sliced thinly (Can also use 2 English cucumbers-no peeling necessary.)
  • 1 medium red onion sliced thinly
  • 1 Tablespoon fresh dill roughly chopped
  • 1 1/2 cups Light Mayo
  • 1/2 cup white sugar
  • 4 Tablespoons vinegar
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground pepper

Instructions

  1. Combine cucumbers, onion, and dill into a large mixing bowl. Add salt and pepper. In another small bowl, combine mayo, sugar, and vinegar. Whisk until smooth. Pour over cucumber mixture. Stir until well coated. Refrigerate until ready to serve.
