Best Ever Breakfast Pizza

As noted above, I originally posted this recipe a little over two years ago. I had found the recipe in one of my cookbooks and thought it was so yummy I just had to share it.
Although I’ve made the recipe several times since, the last time I did I wondered to myself, “Is this really the best breakfast pizza ever?”
I mean don’t get me wrong. It was good. But I just felt like it was missing something. And really, if you’re going to claim something is “the best” I really think it should be.
Unfortunately, the original recipe just wasn’t. So I set out to do some experimenting and I’m OVER THE MOON happy with the final results!
The first thing I decided to change was the crust! Instead of the standard can of croissants, I chose my basic pizza crust recipe.
What you’ll Need:
- Flour
- Water
- Yeast
- Sugar
- Salt
- Olive oil
- Stand Mixer (with dough hook)
- 10″x15″ Baking sheet
- Towel to cover bowl
Now you could definitely use a store-bought pizza crust if you’re short on time. But I have to tell you, friends, my recipe is SO easy and SO fail-proof you’ll never buy store-bought again!

Next, I wanted to add even MORE flavor to that light and chewy crust so I melted a couple of Tablespoons of unsalted butter. Then I added three minced garlic cloves and let them saute for about 30 seconds. Just enough time to infuse the butter with all that garlicky goodness, but not enough to burn the garlic! **YOU DO NOT WANT BURNT GARLIC!
Then I brushed all that yumminess over the crust and put it in the oven for 10 minutes. BTW-two seconds after I did this our home smelled like my favorite Italian Pizzaria!
Y-U-M!!!
You’ll also need:
- Eggs
- Cheese
- Shredded Hashbrowns
- Parsley
- Italian seasoning
- Breakfast Sausage
- Mushrooms
- Onion
- Saute Pan
- Mixing bowl
When the crust has pre-baked for ten minutes, I pull it out and start adding all the toppings!
First comes the sausage that I browned + mushrooms, and onion that I saute while the pizza crust is baking.
Last, but certainly NOT least, I add the eggs and shredded hashbrowns, and finally two kinds of cheese. Then back in the oven it goes until the crust gets golden brown and the cheese is bubbly.
And it comes out looking like the BEST EVER breakfast pizza! But the real test was would it TASTE like the best ever breakfast pizza?
Well, it didn’t take long to find out. Before it even had time to cool ever so slightly, Michael was anxiously waiting for me to cut into it!
I could tell by the first bite he liked it. But by the second I knew he LOVED it!
Between mouth fulls of seasoned sausage, creamy mushroom, and tangy cheese, we both agreed the crust was the kicker! That chewy texture added so much, as did the garlic butter.
Hands down this breakfast pizza is the BEST EVER (at least that we’ve had). And I wouldn’t change a thing. Except maybe to have it more often!
Here’s the full and UPDATED recipe:
Best Ever Breakfast Pizza
A chewy tender crust topped with sausage, mushroom, eggs, hashbrowns, and cheese!
Ingredients
Crust
- 2 1/4 teaspoon active yeast (1 packet)
- 1 teaspoon sugar
- 1 cup warm water
- 2 1/2 cups flour
- 1 teaspoon salt
- 2 Tablespoons olive oil
Toppings
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1 cup Italian cheese blend
- 10 oz breakfast sausage
- 1/2 lb sliced mushrooms
- 1 medium onion diced
- 2 Tablespoons butter
- 3 cloves garlic minced
- 1 teaspoon parsley
- 1 teaspoon Italian seasoning
- 1 cup shredded hashbrowns thawed
- 6 eggs
Instructions
To make Crust

Combine warm water and yeast in the bowl of a stand mixer. Let sit until yeast begins to bubble. (About 5 minutes.) Add-in the flour and salt. Stir with dough hook until just combined. Add-in the olive oil. Knead the dough for about 5 minutes or until the texture is smooth. Remove the dough from the bowl and drizzle in a Tablespoon of Olive oil. Place the dough back into the bowl and flip once in the olive oil. Cover with saran wrap and a towel. Place the dough in a warm, dry location for 1 hour or until double in size.
Toppings

Place sausage in a medium saute pan. Cook over medium-high heat until the sausage is browned. Spoon out into a bowl using a slotted spoon. Set aside. Add mushrooms and onion to the pan. Saute for 10 minutes. Remove from pan and set aside. Add the butter to the pan and once melted add in the garlic. Cook for 30 seconds to a minute. Watch closely so garlic does not burn. Remove from heat.
To make Pizza

Preheat oven to 375. Place pizza dough on a greased baking sheet. Spread out evenly. Brush the dough with the garlic butter mixture. Place the crust in the oven for 10 minutes. Meanwhile, beat the eggs and milk together in a medium mixing bowl. Add the parsley and the Italian seasoning.
When the pizza dough is ready spoon the sausage over the top. Then the mushrooms and onion. Next, sprinkle on the shredded hashbrowns.
Pour the egg and milk mixture over the hashbrowns. Finally, top with cheeses.
Bake in the oven for 25-30 minutes or until crust is golden brown, eggs are set and cheese is bubbly.

Yes indeed, Carole! It was a LOT, and forecast for even more this weekend! Oh well, that’s winter here in Minnesota! As for the pizza, the best thing about it is you can put whatever you want on it. On those days when you want to eat healthier do a veggie version with spinach, fresh basil, mushrooms, heck the skies the limit! Have a great weekend!
