Homemade Waffles

These light and fluffy waffles make the perfect addition to your weekend family brunch, or make ahead for a quick and easy weekday breakfast!

Ingredients

  • 1 3/4 cup flour
  • 1 Tablespoon baking powder
  • 2 Tablespoons white sugar
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 1/4 cup milk
  • 1/2 cup melted butter
  • 1 teaspoon vanilla

Instructions

  1. Preheat waffle iron.

    Combine eggs, milk, and vanilla in a large mixing bowl. Whisk until frothy and completely combined. Set aside. Combine flour, sugar, baking powder, and salt in a medium bowl. Pour the dry ingredients in with the wet ingredients and whisk until just combined. Fold in the melted butter until combined. **DO NOT OVER STIR.

    Spray the waffle iron with non-stick cooking spray. If making regular-sized waffles-fill a 1/2 cup measuring cup with the batter. If making mini waffles use a 1/4 cup measuring cup. Lift the lid of the waffle iron and pour the batter onto the center of the iron. Close the lid. Allow the waffle to cook for 4-5 minutes or until golden brown. NOTE: Most waffle irons will have a light that shuts off when the waffle is done. If you prefer your waffles crispier you will need to leave them in for a bit longer. Remove the waffle from the iron with a fork. Serve immediately.

    NOTE: This recipe makes 6 regular-sized waffles or 10 mini waffles.
