Grilled Cheesy-Rosemary Potatoes!

Hello, sweet friends!

Although we pretty much use our grill all year long, it definitely gets used a great deal more in the summer months.

That’s mostly because I prefer not heating up our kitchen!

But it is also SO much easier to cook everything on one grill. And clean up is a snap too!

We just recently bought one of those ‘griddle’ grills, and I’m just LOVING it so much!

It’s so big that you cook an entire meal on it! Obviously this breakfast loving girl has enjoyed making pancakes, and bacon and eggs on it pretty much every weekend!

But today I’m sharing a quick and easy ‘side’ recipe that has definitely been a family ‘grillin’ favorite for years in our home!

Grilled cheesy potatoes with fresh rosemary from my garden!

Oh my goodness, friends! These potatoes are SO yummy! And they are the perfect side for anything you’re grilling. Chicken, fish, steaks, even burgers!

All you need to make this delicious side dish is 6 ingredients!

Potatoes (of course), Butter (yum!), Cheese (whatever kind you like) Garlic Salt (optional but why not?) Onions, and fresh Rosemary!

Just dice up the potatoes and onion and place them on some foil that you’ve sprayed with some nonstick cooking spray.

Then load those potatoes up with all kinds of yummy goodness! (Psst…Sometimes I like to sprinkle some cut up bacon over the top for a special treat :))

Lastly, simply wrap them up and place them on the grill! These cheesy potatoes usually take about 40-45 minutes so depending on what you’re serving them with you might want to start them first!

You’ll know when they are done because the potatoes will be tender on the inside and SUPER crispy on the outside. And all that cheese? Well, it will be all gooey and yummy and you won’t be able to resist snitching a piece before you serve it!

Oh and expect a few arguments over who gets the crispy nuggets on the bottom! It happens every time here at our house! (Psst…Michael usually wins!)

Grilled Cheesy-Rosemary Potatoes

Ingredients

  • 4 medium potatoes diced
  • 1 medium onion diced
  • 1/2 stick butter
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic salt
  • 2 Tablespoons fresh rosemary chopped
  • 1/2 tsp pepper

Instructions

  1. Preheat grill to medium-high heat. Layout two sheets of foil about 12-14 inches long each. (Double them up). Spray the top sheet with non-stick cooking spray. Spread the potatoes and onion evenly on to the foil. Sprinkle with cheese, garlic salt, rosemary, and pepper. Dot with butter. Fold over sides and end of the foil and seal tightly. Place on the grill for 40-45 minutes or until the potatoes are tender. Remove from the grill and place on a baking sheet. Cut open foil and serve immediately.

Recipe Notes

I always make a big batch of these Grilled Cheesy-Rosemary Potatoes so we have leftovers for another meal! I just throw them back on the grill for a few minutes to reheat and VIOLA!

    The cheesy potato recipe looks so yummy. Thank you for taking the time to share it. I was wondering if you used the cookie sheet on the griddle grill? or just placed the potatoes on the cookie sheet for their photo op? The pictures on Amazon weren’t very good and they left me wondering whether you cooked the potatoes on the griddle part of the grill or is the grill big enough for you to cook the potatoes in foil on a cookie sheet on the grill. And if so then what do you use the griddle part for? I’m wanting to get my husband a grill for his birthday, but would like to know how the griddle part looks with food and how the food turns out. Do you have a photo of your grill in use?

    I appreciate you taking the time to stop by and I’d be glad to answer your questions!
    Since it was raining the day I grilled the potatoes for the post, I wasn’t able to take a photo of them on the grill. But even though I personally do not grill them ‘ON’ the baking sheet, the griddle grill is definitely large enough to accommodate one. In fact, it’s large enough for us to place the foil packet of potatoes, 2 ears of corn, and 2 steaks!
