No-Bake Butterscotch Bars
a chewy peanut butter/butterscotch-marshmallow treat!

It’s been a bit quiet over here on the blog lately.
That’s because we’ve been busy working on our current home in any and all of our spare time.
But I decided last night to take a break, and make a little ‘goodie’ for all our hard work!
And today I’m going to share this oldie but goodie with you!
These No-Bake Butterscotch Bars have been a family favorite ever since I can remember!
My mom used to make them around Easter time, and we’d gobble them up before she even had them cut!
It’s a little early for Easter treats, but spring is right around the corner, and like I said, I’m a wee bit impatient!
I love them not just for how scrumptious they are, but also how fun. Their signature-bright confetti colors always make me smile and remind me of spring!
And with the way the weather has been, I need all the reminders of spring I can get!
what you’ll need to make the butterscotch bars:

- A 9×13 or 8×8 baking pan ** I’ve used both for this recipe. If you prefer thinner bars and more of them the 9×13 is the obvious choice!
- Parchment Paper
- Spatula
- Large Saucepan
Ingredients:
- Butterscotch chips
- Peanut Butter
- Colored Marshmallows
- Coconut
- Vanilla
- Butter
How to make the bars:
- Place a piece of parchment paper into the bottom of your pan.
- Set your marshmallows in the refrigerator or freezer and allow to chill for at least 30 minutes.
- Combine the butter, butterscotch chips, and peanut butter in a large saucepan.
- Cook mixture over low heat, stirring constantly until all three have melted and are smooth.
- Remove saucepan from the heat and allow to cool slightly.
- Add in vanilla and coconut.
- Fold in marshmallows
- Using a spatula scoop the mixture into the baking pan, spreading out evenly.
- Refrigerate
- Lift the bars out of the pan using the ends of the parchment paper
- Cut and serve.
These bars are SO simple to put together that you could even have the littles help out! Although they might eat more of the ingredients than help! I know I do!

No-Bake Butterscotch Marshmallow Bars
Chewy Peanut Butter/Butterscotch bars filled with colorful marshmallows and coconut!
Ingredients
- 1 12 oz package butterscotch chips
- 1 cup creamy peanut butter
- 1/2 cup butter
- 1 10 oz package mini colored marshmallows
- 1 teaspoon vanilla
- 1/2 cup coconut
Instructions

Place marshmallows in the refrigerator or freezer to chill. (At least 30 minutes) Put a piece of parchment paper in the bottom of an 8x8 or 9x13 pan leaving ends out to remove. Combine the butterscotch chips, peanut butter, and butter in a large saucepan. Cook over low heat until the mixture is melted and smooth. Remove from the heat and allow to cool slightly. Add in coconut and vanilla. Stir until combined. Fold in the marshmallows. Pour into baking pan spreading evenly with a spatula. Refrigerate for 1 hour. Remove the bars from the pan (lift parchment paper) and cut. Keep refrigerated or freeze.
