Banana Streusel Muffins

Hello, sweet friends!

If you follow along on Instagram, you probably saw in my stories last week that I was testing out a few new recipes.

Today I’m sharing one of those recipes.

Banana Streusel Muffins.

But before we get to all the yummy details, let me start by sharing a wee bit of a secret.

I’ve got a thing for streusel. A serious thing. Like a total and complete LOVE affair thing!

So when I decided to “amp” up my original banana muffin recipe, I thought why not take it over the top with a new streusel topping?

what’s the secret to a yummy streusel?

Sorry, I can’t tell you. HA! Just kidding. Of course, I’ll tell you! It’s butter! But that’s just the beginning. The REAL secret is crunch! Yes, you read that right. CRUNCH! And to get that crunch you have to have crunchy ingredients. And those ‘crunchy’ ingredients need butter (see we’re back to that) and a wee bit of sweetness and well, then you’ve got…. the perfect streusel!

And OVER THE TOP banana muffins! See why I LOVE streusel so much? But I have to tell you, friends, THIS particular streusel is even better than some of my other streusels!

why?

Because not only does this streusel have the key elements needed for a yummy streusel, butter(of course) oatmeal for crunch, and brown sugar for sweetness. It also has an EXTRA crunch with the addition of sliced almonds!

What if I don’t have almonds?

No problem. You can substitute whatever nuts you have. Walnuts are good, or pecans too!

 

Of course with all the talk about that delicious streusel, you all might be wondering if there’s something wrong with those banana muffins that need covering up!!

Let me reassure you.

There’s absolutely NOTHING wrong with these moist, full banana flavor muffins all by their lonesome. So if you are a non-streusel kinda person, just skip it! (I can’t believe I typed that!!)

But if you’re like me and you could put streusel on ANYTHING! Well then, you will want to try these Banana Streusel Muffins!

Banana Streusel Muffins

A moist banana muffin with a buttery-crunch crumble topping

Ingredients

For Muffins

  • 1 cup white sugar
  • 1/2 cup vegetable oil
  • 2 eggs slightly beaten
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 Tablespoons milk
  • 1/2 teaspoon vanilla
  • 2 cups all-purpose flour
  • 3 bananas ripe (mashed)

For Streusel

  • 1/2 cup all-purpose flour
  • 1/2 cup old fashioned oats
  • 1/2 cup brown sugar
  • 4 Tablespoons butter
  • 1/2 teaspoon cinnamon
  • 1/4 cup sliced almonds

Instructions

  1. Preheat oven to 350. Grease the muffin tins or line them with paper liners. Combine sugar, oil, and eggs in a large mixing bowl. Add in bananas. In a separate bowl, combine flour, baking soda, baking powder, and salt. Slowly stir the flour mixture into the banana mixture. Add in the milk and vanilla. Stir until just combined. Fill muffin tins 2/3 full. Combine ingredients for streusel using a fork. Sprinkle the streusel over the top of each muffin. Bake for 25-27 minutes or until a toothpick inserted in the center of the muffins comes out clean. Remove the muffins from the oven and allow them to cool for 5 minutes before removing them from the tins and allowing them to cool completely. Store in an air-tight container. Makes 18 muffins.

These Banana Streusel Muffins are perfect for breakfast or a weekend brunch. And any mom would love these on her special day this weekend! I know mine will!

  1. Yum Christine, love stressed and add almonds and even better. Can I make streusel to put on top of ice cream? Can it be frozen and taste great? The one thing no one made in my family. but I love it.

    I would use it on anything I baked. PINNED!
