Mixed Berry Yogurt Parfait
Breakfast or dessert can’t get any better (or healthier) than this creamy Greek yogurt Parfait filled with crunchy homemade granola and sweet raspberries and blueberries.
Do you start your day off with breakfast?
Whenever I ask this question to family or friends these are the usual responses.
“NO way! I can’t eat anything until at least 10 am!!”
“Breakfast? Um not unless you consider coffee breakfast?”
“Oh yes, I LOVE breakfast! Give me three pancakes, one egg, and a side of bacon, please!”
“I don’t usually have a lot of time so I just grab a piece of toast or an apple.”
Me? I’m definitely a breakfast kinda gal.
It started W-A-Y back when I was a kid and my mom would make us oatmeal or ‘porridge’ as she called it, every morning for breakfast.
Now that I’m all grown up I still love breakfast but my tastes are a little different than the traditional porridge of yesteryear.
I still love a good bowl of oatmeal, but I prefer Steel Cut Oatmeal. I especially like it when it’s mixed into this slightly sweet and SUPER crunchy granola! And then layered with lots of creamy yogurt and fresh berries!
Now before I get to how I make these delicious creamy parfaits, let me first start with that yummy granola! I have several recipes that I use depending on the time of the year and what I’m going to use the granola for.

To start I pour in 2 cups of my favorite steel-cut oats. Then I add 1 1/2 cups thinly sliced almonds, 1/2 cup unsweetened coconut, 1/4 cup real maple syrup, 1/4 cup real honey, 1 teaspoon vanilla, and 1 teaspoon cinnamon.
Once this is all mixed up I pour it onto a parchment-lined (or greased) baking sheet, making sure the mixture is spread out well.
Then I bake it in a preheated oven at 300 for 30 minutes. After thirty minutes using a spatula I flip the mixture over and bake for another 30-40 minutes or until the granola is a deep brown.
You can store this granola in an air-tight container for up to six months. But I guarantee it won’t last that long!

You can use whatever berries you like. We picked up some fresh organic raspberries at our local farmer’s market this past weekend. So I used them along with some blueberries I had in the freezer. I didn’t even thaw them because they will do that all on their own once they get mixed up in all the other goodness!
I LOVE plain Greek yogurt so that is what I use. Vanilla yogurt is higher in sugar so I just add some along with the cinnamon for extra flavor.
It’s all about the layering after you have all your ingredients ready! I always put a little granola in the jar first, then berries, yogurt, berries, and so on.Â
Once you have filled the jars (this recipe makes 3 half-pint jars) cover them with lids and place them in the refrigerator until you’re ready to eat them!

Layers of Greek Yogurt, berries, and slightly sweet and crunchy granola.
Ingredients
- 1 1/2 cups Greek yogurt
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 1/2 cups granola **See Recipe in my blog post or use your favorite
- 1 cup blueberries
- 1 cup raspberries
Instructions

Combine yogurt, vanilla, and cinnamon in a medium mixing bowl. Layer with 1/4 of the yogurt first, 1/4 of the berries, granola, and repeat. Cover with lids and store in the refrigerator until ready to serve.
These Mixed Berry Yogurt Parfaits are the perfect on-the-go breakfast but why rush? Sit and enjoy. And you can enjoy them for dessert too!
I can still remember my mom telling us that we had to eat breakfast because it was the most important meal of the day!
She was right then and she’s right now! I simply cannot start my day off right if I don’t have breakfast.
So don’t mind me. I’m going to grab one of these yummy parfaits and sit out on the front porch and enjoy the birds singing and the sun shining for just a little bit longer this morning!

I do like breakfast but never really think about eating anything until around 9 am sometimes later and this time of year I sometimes skip it and go on with a really early lunch. This I like and I’ve been meaning to make some homemade granola which would be great with this idea. Going to give this a try because it would be a really good morning option and having it ready to grab and go is perfect.

Oh my, you are like my daughter, Carole! She can go all morning with nothing. Not me! I’m a bear if I don’t get something in my tummy-even if it’s a piece of toast. The granola is absolutely YUMMY! The recipe I shared is just a base-you can add pretty much whatever you want. Sometimes I like to add some chia seeds or dried fruit. In the fall spices are a must! Hope you enjoy!
